What a Mess!

Are you thinking................what has she gotten herself into this time?  :D  The answer is............................GREEN BEANS!  One of the couples at church brought us a MESS of green beans they had picked!  Tonight Tim and I snapped them and I "processed" them for the freezer.  The process is called "blanching."  Very easy to do, too!  Fill a pot 2/3 full of water and bring to a boil.  After the water begins to boil, throw the clean green beans into the water (I had washed them before Tim and I snapped them).  Put the lid on the pot and let them boil for 3 minutes.  In the mean time, fill another pot with cold water and ice.  As soon as the 3 minutes are up, put the beans into the ice cold water to stop the cooking.  Drain and bag up the beans for the freezer.  We now have 5 quart bags of green beans in the freezer!

There were a couple more hands full of green beans that wouldn't fit on top of this bowl.  And we ended up with 5 quarts shown below.  Thank the LORD for His marvelous provision!  I'll have to do some catching up and show you some of the good things I have made from the "fruits" of our veggie garden and herb garden!

  1. I've never been a caner but I like the idea of the "blanching" and freezing! Thanks for the instructions! I might try that!

  3. That's how I process my beans, too. I can other things but usually I freeze beans and corn. We like them so much better that way. I haven't had anyone give me any beans yet this year. I probably won't either since my usual source didn't put out a garden this year. I might need to visit some of the farmer's markets and actually buy them. Horrors! :)
