I started working on cleaning up the kitchen. I usually don't do any dishes on Thursday since we are out and about all day, so the only thing is usually bowls from Tim's cereal, and a few glasses. However, there was a bit more from Wednesday night after church. Before I finished, Tim returned from making a visit at the Abbott's Creek Rehab facility and said he was going to run to the hospital to make a visit and then stop by Walmart on the way back to pick up the few items listed on the fridge. I told him I would go with him if he could wait til I finished the dishes.
After we returned we fixed our lunches and then I worked on a craft project until it was time to leave to make a visit to a shut-in member of our church.
I fixed a new recipe that I found on the internet that I will share below. I fixed the spices so I could marinate it til time to pop it into the oven. It was delicious!
Today's blog post title is the photo prompt choice for today.....the view from here, that is. And, to me, that covers every picture I take. :D And, so, without further ado, here are my pictures from the day:
Here's the recipe for the Salsa Lime Chicken:
Preheat oven to 375 degrees.
Mix the following together:
3 Tbsp. fresh cilantro (I used 1 Tbsp. of the dried)
1/4 tsp. cumin
1/4 tsp. cayenne pepper
1/4 tsp. sea salt
2 Tbsp. Extra-virgin olive oil (I used regular)
Set aside while preparing the chicken (2 skinless, boneless breast halves, or 1 lb.)
Spread some of the spice mix in the bottom of baking dish.
Add chicken and spread the rest of the spice mix over the chicken.
On top of this, add 1 cup salsa spread over the chicken.
(I covered and put in the fridge to marinate for awhile.)
Slice the lemon. Put 4-5 slices on top of the dish before popping into the oven. (Save the ends of the lemon for squeezing on the chicken when you get ready to eat.)
Bake for 25-30 minutes uncovered.

It was yummy! We added the leftover sauce (drippings) as a topping to our potatoes. |
Here's the craft project I worked on today.
I cut out, tore and gathered all of my papers and cut out letters. |
I glued down the first layer after I drew pencil lines as guides for the edges. |
Then I glued down the other layers. |
Then I added the letters and writing. I used stamps for the "with all your heart" but I messed up the stamping. I wish I had free-handed that part instead. |
